Which desktop memory would be better & faster?

Definitely #3. While the other ones are really great, reliable and fast RAM chips, 8GB is way to much and you would be wasting your money. 4GB of DDR3 1866 is really plenty for a while yet. You can always buy 4 more gigs a couple years down the road if it becomes necessary, but for now thats plenty
